Realize I’m late to the party and didn’t even think of it the first time I saw this post but I haven’t seen anyone else say it yet.
If you go a really long time without eating, you actually need to start eating again slowly. Otherwise it can be fatal. It’s called refeeding symdrome.
So my guess is there is a point at which being encouraged to eat slowly even while you haven’t eaten is useful, and it probably is just overactive because the downside of overactivity is better than the downside of underactivity. It is essentially naturally dialed up.
I do not have any evidence for that part, it’s just wild speculation.
