For the record, I’ve also received this “pork loin sandwich” treatment in the southwest Chicago suburbs in Illinois and outside of Branson in southwest Missouri. They always have mayo, but variations have added pickle and/or a slice of tomato.

There’s a restaurant in Vienna that also serves this (without the bread). It’s very good with potato salad and also cheap :D
